Swig Cookie Copycat

When our family was out in Utah a few months ago, we couldn’t wait to find a Swig to go to. For those of you who don’t know, Swig is a drive by soda and sweet shop. But it’s not just normal soda it more like fancy soda mockatils with the most amazing sugar cookies! And even though we were in Utah for only a couple of days, I think we went to Swig three or four times. It is just so good!… and that is saying something coming from a girl who doesn’t normally drink soda, but I digress. Ever since we left Utah I crave their Swig cookies. Luckily Pintrest came to the rescue and I found the most amazing Swig Cookie Copycat recipe.

Now Cue the music!

Baking with my kiddos is always fun and always messy. But I love it! My favorite part about this Swig Cookie Copycat recipe from ShugarySweets is that it is easy for all my kiddos to help with! Normally when I make sugar cookies it takes a while as you chill the dough, cut out all the shapes and try to decorate them all cute. These swig cookies have none of that hassle. Instead all you need is a cup, some arm muscle (As long as you have the strength of my two year old you are good lol!) and a spoon to spread the frosting with. Like I said, this recipe is a winner!

So put on some fun dancing music, gather your kiddos around and get ready to bake. You wont regret it!

Ingredients

For The Cookies

  • 1 cup salted butter soften
  • 3/4 cup vegetable oil
  • 1 1/2 cup granulated sugar divided
  • 3/4 cup powder sugar
  • 2 Tbsp Water
  • 2 Large Eggs
  • 5 1/2 cups All Purpose Flour
  • 1/2 tsp baking soda
  • 1/2 tsp cream of tartar
  • 1 tsp Sea Salt fine grain

For The Icing

  • 1/2 cup salted butter softened
  • 3/4 cup sour cream
  • 4 1/2 cups powdered sugar
  • 6 drops pink gel food coloring (or more or less, depending on how pink you like things)

Instructions

  • Preheat oven to 350 degrees F. Line a baking sheet with silicone baking mat or parchment paper. Set aside.
  • In a large mixing bowl, beat butter, vegetable oil, 1 1/4 cup granulated sugar, powdered sugar, water, and eggs until combined. Slowly add in flour, baking soda, cream of tartar, and salt. Mix until blended.
  • Dough may be slightly crumbly, but should not be sticky. Using a spoon, spoon out a dough ball and roll it in your hands. (I like to make bigger cookies but its up to you on the size, but at least a spoonful) Place on cookie sheet.
  • In a small bowl, combine 1/4 cup granulated sugar and a pinch of sea salt.
  • Using a glass cup with a flat bottom, dip glass in sugar bowl, then press on top of cookie. Flatten cookie so that the dough spills out over the sides of the glass to create a lip (for the icing). Repeat for all dough balls.
  • Bake cookies for 7-9 minutes. Remove and cool completely on wire rack.
  • For the icing, beat together the butter and sour cream until well blended. Add in powdered sugar and food coloring, beating until well blended.
  • With the back of a metal spoon, spread the frosting onto the cookies
  • Now try not to eat them all!
